Cooking From the Pantry


Some women shop for clothes and shoes that they never wear and fill their closets. I have this problem with food. I see something and think of a meal that somewhere down the line I will want to make so I buy something and then, never use it. My pantry is filled to the brim. Needless to say, this is a pet peeve of my husband's. So, in an effort to save money and clean out my pantry, I'm trying to cook meals that use only what I have (the occasional fresh ingredients excluded). Tonight I made salmon (it was in the freezer) and sesame noodles using only what I had on hand. It turned out okay. I'm happy with my resourcefulness, but I really could have used some grated ginger...:)
Salmon
Heat oven to 450 degrees
Ingredients
1 Frozen Salmon Fillet
2 Tablespoons Soy Sauce
1 Tablespoon Toasted Sesame Oil
3 squirts or so of Honey
Garlic- finely chopped (I liked to grate it using my micro plane)
Pepper
Directions
1. Defrost Salmon in the fridge overnight, once salmon is defrosted, rinse, pat dry w/ paper towels and place in a baking dish.
2. In a small bowl, add soy sauce, garlic
3. Whisk in oil and then, honey
4. Add freshly ground pepper
5. Pour mixture over salmon.
7. Bake salmon for 17-20 min, or until desired doneness (salmon should flake easily)

Sesame Noodles-


Ingredients
1 package whole wheat spaghetti noodles
4 Tablespoons soy sauce
1 table spoon toasted sesame oil
2 tablespoons of canola oil
1 clove of garlic- chopped
1 teaspoon sugar
Chili Sauce (like Siracha, but if you only have Tabasco, that will do)
1 teaspoon toasted sesame seeds
6 scallions-chopped
1 red bell pepper- sliced
Fresh cilantro roughly chopped (optional, I know not everyone likes it)

Directions
Bring a pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and transfer to a serving bowl.
Add bell pepper, scallion to the bowl

Meanwhile, place a saucepan over medium-high heat and add oil. Stir in garlic, sugar, oil, soy sauce, and chili sauce. Bring to a simmer, stirring constantly, until sugar dissolves. Pour sauce over linguine, and toss to coat. Garnish with cilantro.
